Homemade Cinnamon Granola

One of our school friends, Angela
had posted a picture of her homemade
granola on facebook the other day.

Not only did it look deeeelish, she had mentioned
how wonderful it smelled

thinks she is a human
make your house not smell like something
from Better Homes and Gardens, go figure....
so I was up for the challenge

It was super easy to make, and really did make the house smell absolutely fabulous. 



Homemade Cinnamon Granola
1 Tbsp + 4 Tbsp butter, divided
3 cups oats
1 cup flax seed (I used flaxseed meal, your body does not digest whole flaxseed)
1Tbsp cinnamon
1/2 cup brown sugar, packed
1/4 cup honey
1 Tbsp maple syrup
1/2 tsp vanilla

Preheat oven to 350.
In a large non-stick pan, melt 1 tbsp butter over medium heat.
Add in oats, flax & cinnamon. Stir constantly 3-5 minutes until oats are heated & slightly toasted.
Pour oats onto a cookie sheet (with sides, I lined with foil).
In same pan melt remaining butter. Add in brown sugar. Stir until sugar is dissolved.
Add in syrup & honey. Bring to a simmer.
Remove from heat & stir in vanilla & add back in oats. Stir to coat evenly.
Pour back onto cookie sheet and bake for 10-12 minutes. (you're house will smell amazing!!!).
Remove & let cool completely.
Break into pieces & store in an air tight container.



Toss in yogurt, cereal, trail mix, eat alone, or whatever floats your boat. 
I am going to attempt next time to add 
choco chips or peanut butter chips....nomnomnom...
