Anyone else have an image of Adam Sandler singing about sloppy joe's when you hear it? No?? Alrighty then...
This is yet another from Eating For Life, one of our fav's, and even the offspring eats yet. Yup, you read that right. It's super fast and el cheapo to fix. That's a winning combo folks.
Sloppy Joe's
4 portions lean ground turkey (about one gobbling pound)
1/4 tsp ground black pepper
1/2 red onion, chopped (I opted out on this)
1 can (8 oz.) no-salt added tomato sauce
1/2 cup ketchup
1/4 cup barbecue sauce
1 tsp chili powder (again, I
forgot opted out)
Dash of hot pepper sauce (opted out, yesssss that's three times now)
4 wheat buns or rolls, split (we use 5)
4 lettuce leaves
1. In a large skillet, combine ground turkey, black pepper and onion. Cook over medium heat, stirring occasionally, until the turkey is no longer pink.
2. Stir in tomato sauce, ketchup, barbecue sauce, chili powder and hot pepper sauce. Simmer for about 10 minutes over low heat, stirring occasionally, until mixture has thickened.
3. Place a wheat bun on each plate. Top with a lettuce leaf and a portion of turkey mixture and enjoy.
As the 12 year old said, 'Come, lettuce ketchup'. Yeah, a regular stand-up comedian right there.
