Wednesdays Wearings #33

I am letting all of my lovely readers down this week... I failed miserably on this post.

I can't explain the wind and nasty dirt we have been having here. No bueno.

I get having cute and fun clothes for different types of weather, such as:
1. Fun, fluffy soft snow...
2. Glorious rain...
3. Bright, full sun...
4. Fall-ish with a slight breeze...
5. Spring with cooler, sunny temps
But no where in this list does it contain where peeps make clothes to be sand blasted. 
Every. 
D.A.Y. 
and to withstand hurricane force 'breezes' (my butt)... 
About to tell the wind and dirt to shove it where the sun don't shine...could that be an oxy-moron because it usually doesn't blow when it is cloudy and raining? But that has only happened like twice in maybe 18 months?? Just a deep thought...

SO my attire this week, has been less than fashionable, especially yesterday morn when I had a meeting with several other moms and I felt I tad bit of rebelling coming on.
I don't do gussied up. Period.
But, seems folks around these parts always have an extra bedazzler on hand to gussy up any dern thang that ain't sparklin'. Know what I mean, Vern?

My contacts kill the living tar out of me on these days, so I opted for my new specs (another secretive form of rebellion, muahaha) knowing we would have to sit through a lovely tennis match for the tennis playing offspring. saweeeeeetness...(couldn't even pull out my camera this week, had to opt for my camera phone in the mirror (can you say lame-o)

 This is just to show you how 'brown' it was...you can tell by how pink her pants actually are and the red pole...barf...


Sorry for the negativity...a Cup full of a hurricane without the water, mixed with 3/4 full of a haboob and a few pinches of a drought makes for an unhappy village.

Winner, Winner...Chicken Dinner

I stumbled across this yesterday on Pinterest, which normally on pinterest I fly through there in a pinning frenzy and go on about my day. But a few times, I will stop if the caption catches me or the picture intrigues me to dig deeper....and this one did.

This recipe looked easy and fast enough, I said 'self, what the hizzle, lets give it a try', except I am NOT good with recipes with OUT specific instructions...and that's exactly what this one was.
crapooooola.
I called a good friend who can cook anything...no lie...and ran through my thoughts and happily I wasn't too far off in my little head, yipee!

Chicken/Avocado Salad, aka Chicken Salad with Avocados
Cooked Chicken, shredded (I used two cups)
Avocado (I used two small av's)
Mayo, just a little (I used 1/3 cup)
I added celery, two small stalks
Green Onion (I left out)
Cilantro (I sprinkled a few times on top, then mixed)
Lime Juice to Taste (Seemed like I used a bit so it wasn't too dry)
Salt/Pepper to Taste

This fed three of us, two of the offspring were grossed out by the color, and the three of us that did...we had multiple servings, sooooo friggin good.....


The pin I got it from said to use chips, so I did. Guess you could use bread, but it's thick and I can't imagine swallowing. I ended up just eating it by itself. The pin also said it kept well and was even better as leftovers, but wouldn't the avocados be black? Or would the lime keep it green....Things to ponder today...

Was contemplating working on my Oscar post from last night (I did thoroughly enjoy the entire show, which is unusual for me ;)), but I seriously loved ALL and I mean ALL of the fabulous dresses. Sure there were some that I may have not been 100% about, but I didn't hate them.

Shine On and Pass It Forward

I have been a long time follower and admirer of Ashley from The Shine Project. Her project is absolutely amazing and I am INSANELY excited to be a part of it! 

I received an email this last week about helping promoting her new project and it is an awesome one! Ashley has been working on this recent project for a while now, and feels that it will make a great impact on our communities. 

It's PASS IT FORWARD and here is what it is all about:
'Pass It Forward was designed to get people to do little things, everyday, that makes an impact on the community around them. Pass it Forward is designed around a card. Each card is given a unique ID number. Lets say we're at Starbucks, and I decide to pay for the person behind me in the drive through. I'd give the cashier the card, and tell them to pass it along to the next car when the give them the food that has been paid for. I then go home and log into the website that was on the card, and find my unique ID number. I log into it, and add my information... My first name, city, and a description of what I did.... If the person behind me was you, you would pass it forward to someone else, and then would go home and do the same thing. 
From the very beginning, you will be able to track where your card goes, and how many people you affect just by doing one simple act of kindness.'

I can hardly wait to get my card in this week and watch this all unfold, see how far my cards go. You can get the cards in her shop. You receive cards with every purchase in her shop, or you can just buy a pack of ten cards for $2.50, not bad huh? 

On Fridays, Ashley will be sharing stories about this project that were sent in about how someone received or someones act of kindness in giving it. I am super curious all the creative ways we can come up with and can't wait to hear about them!

Social Attire

We have plans next weekend for a little get together...kind of...

It's not exactly little or just a get together, BUT that's not important here people. What is, is the attire. It hit me all of a sudden the other day that I had no idea what I was planning on wearing. SHOCKING, yes I know. But this is actually one of the only things I do plan semi-in advance (I say semi because I usually end up changing things the last minute), social attire. 

The event is at night and it is still chilly around these parts and horribly windy, but I didn't care. It's a party for crying out loud, so I wanted to be girly and dress up, actually feels like it has been a while. So this is what I came up with:

Quite lovely, right? But reality has set in today and knowing that most peeps around here will be sporting boots and jeans (giddy-up y'all), and reminding myself about the cold and especially the wind and the fact that I am TERRIBLY cold natured, now this: 40th Party
It can still feel a slight spring-ish, but how fabulous is the bag and shirt? Holla....I'm digging it, what about you? What would you choose?

Ham and Cheese Egg Casserole

Ran across this yesterday in once of my fav cookbooks that I have talked about here and here. It is pure awesomeness people. All recipes are healthy and super tasty (unless you add an insane amount of cheese as I do to everything...but it's still better than other stuff, right?) 

This one was especially a win win in my book because of how crazy easy it was and didn't take all that long to cook. 

Ingredients:
2 cups frozen diced potatoes
1 cup cooked lean ham, diced
1/2 cup fresh mushrooms, sliced (I added almost a cup, whoops...but hey, I am a fungi(super lame))
2 green onions, sliced (I omitted)
1 1/4 cup egg substitue
1/2 cup skim milk
1/2 cup reduced-fat cheddar cheese, shredded (Think I accidentally added two cups)

1. Preheat oven to 325.
2. Lightly coat a 9x13 baking dish with cooking spray.
3. Layer potatoes evenly on the bottom of the dish; top with ham, mushrooms and onions.
4. In a small mixing bowl, beat egg substitute and milk with a fork or whisk until well blended.
5. Pour egg mixture over ham and vegetables in baking dish and top with cheese.
6. Bake until eggs are firm and top is lightly browned, approximately 40 minutes (mine was about 55 min.).
7. Cut into 4 portions (there are 5 of us and 3 of us had more than 2 helpings...do that math, smarty pants!)
